Jiggs Dinner and Peas Pudding (also called pease pudding)

3 lbs of salt beef
6 potatoes
1 head of cabbage, quartered
1 medium sized turnip cut in slices

1 lb carrots
1 bag yellow split peas Butter



Soak beef overnight in cold water.

Drain, add fresh water to pot. Boil for 45 minutes.

Add cabbage, carrot and turnip. Boil for another 20 minutes.

Add potatoes. Boil for another 20 minutes or until potatoes are fork tender.

Peas Pudding

Soak a full bag of yellow split peas in cold water overnight.

Drain peas, place in a pudding bag and tie securely.

Put the bag in the pot with the salt beef and vegetables.

When the salt beef and vegetables are cooked, remove peas from bag and
mash with butter and pepper to taste.
