Newfoundland and Labrador Cuisine

Baked Beans

Newfoundland and Labrador Recipes

1 lb white pea beans
4 cups cold water
1/4 lb sliced salt pork
or bacon

1/4 cup molasses
1 tbsp brown sugar
1/2 tsp salt
1/4 tsp pepper

1/2 cup ketchup
1 sliced onion
1/2 tsp mustard

Soak beans overnight in cold water. Drain and rinse.

Add 4 cups cold water and beans to a pot. Bring to a boil.

Let simmer 20 minutes. Drain.

Add remaining ingredients to beans and place in a deep casserole dish.
Add water until beans are covered.

Cover and bake at 250 degrees for 6 to 7 hours.
